Ingredients:
- 1 x West Peak Meats Primecut Bacon
- A Medley of mixed cocktail tomatoes, sliced
- Salt and Black pepper to taste
- Mayonnaise with 1 tsp. of lemon juice and ½ tsp. lemon zest
- Gouda cheese slices
- Peppadew sliced
- 3 slices of fresh Ciabatta
- Butter lettuce
Method
Air fry the bacon until it is fully cooked and crispy at 180 degrees for about 20 minutes.
In the meantime combine the mayonnaise, lemon juice and zest in a small bowl. Spread a thin layer of the lemon mayonnaise on one side of each of the 3 pieces of bread.
Assemble
Place one slice of bread on a plate, then layer the lettuce, tomatoes, pepperdews, bacon and cheese and place another piece of bread on top, then repeat the layers and end off with the final piece of bread.
