Ingredients
- Taiwanese pancakes (use from frozen)
- 1 to 2 Tbsps. Butter for cooking
- 3 Large eggs
- West peak bacon pieces 200g – cooked and tanned
- Spring onion 15g chopped
- 1 cup of Cheddar cheese grated
- Sesame seed for garnish
- Dipping sauce: Thick sweet soy sauce or plain soy sauce
Method
Melt the butter in a non-stick pan.
Mix the eggs together and add to the warm pan (medium heat). Take one frozen Taiwanese pancake and place it on top of the egg. When it is half cooked, flip the pancake/egg over.
Add bacon, spring onion and cheese. Take a fork and a spatula and roll the egg pancake up like you would do with a normal pancake. Allow for the cheese to melt and dish onto a plate. Cut the pancake into pieces and garnish with sesame seeds and serve with soy sauce or thick sweet soy sauce.
