BACON, VEGGIE AND CHEESE QUICHE

Ingredients

  • West Peak bacon pieces 200g
  • Olive oil for cooking
  • Mixed vegetables 250g (frozen or raw)
  • [For this recipe we mixed broccoli and cauliflower florets and red
  • cabbage with the frozen veg]
  • 6 – 7 large eggs
  • 1 cup of cheddar cheese
  • 2 Tbsps. milk
  • Salt and black pepper

Method

Cook the bacon in the olive oil and set aside.

Place all the vegetables in a pan and fry/ cook until it is soft, break the vegetables up quite fine and set aside to cool.

In a separate bowl mix the eggs, milk and cheese together. Add the bacon and vegetables to the egg mixture.

Preheat your oven on 180 degrees. Prepare a muffin pan and fill the holes with the egg, bacon and vegetable mixture (3/4 full only).

Bake for about 20 minutes, until golden brown and cooked through.

Enjoy these warm or cold!
