SUSHI-STYLE COLD MEAT ROLLS

Option 1: Beef and Avocado Rolls
1 pack of West Peak Meats smoked beef
Chive-flavoured cream cheese
Thinly sliced cucumber
(If you prefer choose thinly slices Rocket leaves instead of cucumber)
Avocado slices (trimmed to fit)
Ground black pepper
Balsamic reduction glaze

Option 2: Ham and Peppadew Rolls
1 pack of West Peak Meats Gypsy ham
Mayonnaise
Sliced peppadews
Finely grated Grand Padano cheese
Avocado slices (trimmed to fit)

To assemble:

For the beef rolls:
Lay the slices of beef horizontally, overlapping them by 1cm. Spread the cream cheese evenly over the beef. Rotate the board so the meat is positioned vertically in front of you Place the cucumber at the bottom, covering half of the first slice. Add avocado slices on top of the cucumber, then sprinkle with black pepper and drizzle with balsamic glaze.
Roll tightly from bottom up and cut into sushi-style pieces.

For the ham rolls:
Lay the slices of ham horizontally, overlapping them by 1cm. Spread the mayonnaise evenly over the ham. Rotate the board so the meat is positioned vertically in front of you. Place the peppadew slices at the bottom, covering half of the first slice. Sprinkle grated cheese over the peppadews and the rest of the meat. Add avocado slices on top of the peppadew section.
Roll tightly from bottom up and slice into sushi-style pieces.
