Ingredients:
West Peak Meats Uncooked Smoked Gammon (Deboned)
4 Small onions, thinly sliced
1 tsp.. black peppercorns
1 tsp. mustard seeds
3 bay leaves
For the Honey Glaze
2 tbsp. honey
3 tbsp. oyster sauce
3 tbsp. soy sauce
2 tbsp. sweet mustard sauce
1 tbsp. sesame oil
1 tbsp. crushed garlic and ginger
Instructions:
Place the gammon, onions, peppercorns, mustard seeds and bay leaves in a pot. Cover with water. Bring to boil, then simmer for 1 hour.
Mix all the glaze ingredients in a bowl.
Remove the string from the gammon and cut off the rind. Score the flat in a criss-cross pattern. Place the gammon in foil. Brush with half of the glaze, wrap it up and air fry at 180°C for 15 minutes. Open the foil, brush on the remaining glaze and air fry for another 10 minutes until sticky and golden.
