Ingredients:
1 – 2 medium tortillas ( 1 tortilla per tortilla quiche)
2 eggs mixed with milk (like scrambled eggs) per tortilla
2 Tbsp. plain cream cheese
½ a pack of sliced brown mushrooms
½ medium white onion, chopped
1 x tomato, sliced
A handful of spinach roughly chopped,
1 cup of grated cheddar and medium fat hard cheese, mixed
1 pack of West peak Meats smoked ham
Mozzarella cheese pieces
Spicy chilli crisp
Fresh thyme
Method:
We love a cast iron pan! If you have one, grab it and set in on a wooden board.
Prepare your cast iron pan and place one tortilla in it. Add the scrambled egg mixture and cream cheese; mix until well combined.
Add the mushrooms, onion, tomato and spinach and some of the cheese mix.
Then add the ham, rest of the cheese, mozzarella pieces and chilli crisp. Sprinkle with fresh thyme. Bake for 20 minutes at 200 degrees or until cooked through and golden brown.
