Ingredients
- West Peak Meats Smoked Pork Eisbein
- 3 Medium potatoes, cubed
- 1 Medium sweet potato, cubed
- Salt and ground pepper
- Olive oil
- Rosemary
Method
Salt the eisbein and leave it to rest uncovered in the fridge for 1 – 2 hours.
Rub the eisbein with olive oil and place it in a prepared baking dish. Arrange the potatoes and sweet potatoes around it and drizzle with olive oil and add salt and pepper to taste. Place a sprig of rosemary on top of the Eisbein and roast for 1.5 hours at 180 degrees.
Remove the eisbein from the baking dish and place it in the air fryer for 20 minutes per side on 180 degrees.
