SPICY BUTTERNUT SOUP WITH CRISPY BACON PIECES

Ingredients:
1 Large butternut, peeled and chopped
1 Large onion, peeled and chopped
1 Tbsp. garlic
2 Grated red apples
1L of chicken stock
1 Tbsp. Rajah curry powder
Cajun spice
Salt and pepper
400ml Coconut milk
West Peak Meats bacon pieces
Fresh thyme

Method:
This recipe can be prepared in a large pot or in a slow cooker.

If you choose to make this in a pot, you will pre-roast your butternut and then add the ingredients and proceed accordingly.

However, if you choose to make this in a slow cooker:
Pan fry the onion and garlic in olive oil and add it to the slow cooker. Then add the butternut and apple. Add the curry powder to the chicken stock, mix well and pour the stock over the butternut. Add the Cajun spice, salt and pepper. Cover and slow cook for 10 – 12 hours on the low setting. Add the coconut milk and slow cook for another hour on low. Hand-blend the soup until smooth or use a food processor.

Prepare your bacon pieces in an airfryer or pan fry.
