Ingredients for the Salad:
A handful of spinach, shredded
A handful of crispy lettuce
Cocktail Bella tomatoes, sliced
Carrots, carrots,
Cucumber, diced
Nectarines, thinly sliced nectarines.
West Peak Meats bacon pieces
West Peak Meats smoked chicken fillets
Black pepper and salt
White wine vinegar
Kale pesto
Kale Pesto Ingredients:
In a food processor, blend 1/2 cup of sunflower seeds, 1 tbsp garlic, salt, pepper, 2 cups of kale, 30ml lemon juice, and 1 tbsp honey until it forms a pesto.
Method:
Create a bed of shredded spinach and crispy lettuce on a serving plate. Toss in the small Bella tomatoes, carrots, cucumber, and nectarines. Add the cooked bacon pieces and top with the flavourful smoked chicken fillets.
Finish off with a sprinkle of black pepper, a dash of salt, a drizzle of white wine vinegar, and dollops of the kale pesto.
