SANDWICH HAM AND CHEESE MUFFINS

Ingredients:
2 x small eggs
120ml melted butter
180ml milk
50ml oil
300g Cake wheat flour
2 tsp. Baking powder
Salt
Herb spices
2.5 smoked paprika
2 cloves of garlic finely chopped
120g West Peak Meats sandwich ham
1 cup grated white cheddar
2 leeks finely chopped

Method:
Gently fry the garlic and leeks and set aside.

In a large bowl combine the eggs, melted butter, milk and oil. Sift in the flour, baking powder, salt, herb spice and paprika. Add the garlic, leeks and ham and mix well, then add the cheese.

Scoop the batter into muffin liners, about ¾ full per cup and bake for about 20 minutes at 200° .

Allow for the muffins to cool and transfer to a wire rack.

Tip: The ham can be substituted with West Peak Meats bacon or sausages. You can also add or substitute ingredients like spinach, sundried tomatoes, chives or scallions.
