PIZZA WITH BACON AND GORGONZOLA
Ingredients:
Homemade dough/ bases with tomato
2 Garlic cloves, chopped
Grand Padano, grated
West Peak Meats back bacon, cooked
Gorgonzola
Caramelized pear – see method
[Butter and syrup for the pear]
White cheddar cheese, grated
Wild rocket (for garnish)
Prepare the caramelised pear:
In a pan, melt 2 Tbsp of butter over medium heat. Add thinly sliced pear and drizzle with syrup. Cook for about 3 minutes per side until the pear slices are golden. Remove from the heat and set aside.
Method: Preheat the oven to 200 degrees.
Assemble your pizza:
Add the garlic and Grand Padano cheese on the base. Add the cooked bacon, pieces of Gorgonzola and the caramelised pear. Top with a sprinkle of Grand Padano and a handful of white cheddar.
Bake until cooked for about 15 – 20 minutes.
Garnish with rocket.
