Ingredients:
1 Old Smoke House Smoked Gammon (West Peak)
1 l Coke
3 Bay leaves
3 Cinnamon sticks
1 tsp. chilli flakes
1 onion, roughly chopped
For the glaze:
1 cup of Strawberry jam
3 Tbsp. sweet mustard
Juice of one lemon
Method:
Place the gammon in a large pot. Add the onion, bay leaves, cinnamon sticks, chilli flakes and coke. Boil for about 90 minutes (size is about 1.7kg)
Make the glaze: Mix all the glaze ingredients together in a small saucepan and cook over low heat, until blended – stirring the whole time.
Preheat your oven on 200 degrees. Score the fat surface of the gammon with sharp knife, making uniform diagonal cuts.
Place the gammon fat side up in a roasting pan and roast for about 30 minutes. Take the gammon out of the oven and brush the gammon with about 1/2 cup of the glaze and bake for another 15 – 20 minutes. Heat the remaining glaze and serve it as a sauce with the gammon.
