Ingredients:
For the gammon:
1 West Peak Meats Gammon
1 medium white onion, chopped
2 cloves garlic, chopped
3 bay leaves
2 cinnamon sticks
For the candied orange and grapefruit slices and glaze:
2.5 cups brown sugar
1.5 cups hot water
1 orange, thickly sliced
1 grapefruit, thickly sliced
Method:
Place the gammon and all the gammon ingredients into a large pot. Cover with water and boil for 2 hours. Strain the water and don’t forget to save it for stock – it’s perfect for soups or sauces.
The candied fruit and glaze:
Add the water and sugar to a pot over medium heat. Stir until sugar has completely dissolved.
Add the orange and grapefruit slices, flipping them occasionally. Let them simmer for about 40 minutes. Allow to cool to slightly so the glaze can thicken.
Score the gammon, pour the liquid glaze from the fruit over it and, bake at 180°C for 20 minutes and spoon over the liquid occasionally. Finish it off under the grill for a few minutes to lightly brown the top. Arrange the candied orange and grapefruit slices on top for a stunning presentation.
