Ingredients:
1 x red onion, thinly sliced
2 Tbsp. butter
1 x Tbsp. garlic
Dried herbs
1 x cup of frozen corn and pea mix
1 handful of baby spinach, chopped
1 packet of West Peak Meats Egterook wors (slice and fry for 2 minutes)
200g cream cheese (chives flavour)
6 – 8 eggs
Black pepper and salt
Method:
Fry the onion in the butter in a pan until glassy and add the garlic, corn mix and spinach, cook until the veg are soft. Add the sausage, cream cheese and mix well. Spoon the mixture into a prepared oven dish and break the eggs ontop of the mixture, spreading them out evenly, add salt and pepper to taste and bake for about 30 minutes at 180 degrees or until the eggs are cooked.
Serve with bread for either a light dinner or lunch. You can also use individual bowls in stead of an oven dish, then you will use 2 eggs per bowl.
