Ingredients:
4 cups cooked rice, cooled
1 pack West Peak Meats bacon pieces, fried and fully cooked
1 pack chicken fillets, baked and shredded (West Peak Meats smoked chicken fillets work great too)
Olive oil, for cooking
4 eggs, beaten
120ml low-medium soy sauce
2 Tbsp. oyster sauce
Frozen peas and corn
Fresh chives, chopped
Black pepper, to taste
Method:
Heat some olive oil in a pan, pour in the beaten eggs and allow them to spread evenly. Flip and cook through, then transfer to a plate, cut into pieces and set aside.
Add a bit more olive oil to the same pan. Add the rice and cook for about 2 minutes. Stir in the soya sauce and oyster sauce, cooking for another 5 minutes. If the rice is too sticky, add a little hot water – just enough to prevent it from burning. Mix in the peas, corn, chicken and bacon and continue cooking until everything is heated through. Finally, add the eggs and chopped chives. Season with black pepper and taste; add salt if needed.
