Ingredients:
5 large eggs
145ml cooking cream
Salt to taste
½ a red onion, chopped finely
2 baby Pak choi, roughly chopped
½ a cup cherry tomatoes, halved
Olive oil for cooking
1 x pack West Peak Meat/ Old Smoke House Jalapeno en feta grillers, sliced
1 wheel of feta
1 cup cheddar
1 tsp. fresh herbs, for garnish
Method:
Preheat the oven to 200 degrees.
Whisk eggs, cooking cream and salt until you get a smooth and even texture. Set aside.
Prepare an oven dish.
In a medium sized pot, add the vegetables and grillers and braise in olive oil. Add the egg mixture and combine. Pour the mixture into the oven dish and sprinkle the feta and cheddar. Using a fork, distribute the cheese around a little to incorporate it into the eggs. Bake for 15 to 20 minutes, or until the edges are set and the top is lightly browned.
Garnish with fresh herbs.
