Ingredients:
500g self-raising flour
100ml brown sugar
Pinch of salt
300ml beer
1 x packet of West Peak Meats back bacon, shredded
A few sprigs of fresh thyme
Method:
Place the flour, brown sugar and salt in a large bowl and mix. Pour 300ml of your favourite beer right into the middle of the flour mix. Go slow, and blend it until it’s smooth. If it gets too runny, add a bit more flour.
Place the dough in a prepared bread pan and spread some shredded bacon evenly on top of the dough. Sprinkle sprigs of fresh thyme for extra flavour! Bake in a preheated oven for 1 hour at 180 degrees. To check if it’s done, poke it with a fork – it should come out clean. Once it’s beautifully baked, take it out of the oven. It should slip right out of the pan. Wrap it up snugly in a clean tea towel.
