BACON AND SPINACH WITH TWO CHEESE MUFFINS

Ingredients:
2 tsp. olive oil
One white onion, finely chopped
West Peak Meats Bacon pieces
2 x cups spinach, shredded
2.5 cups flour
1 x tsp. baking powder
1 x egg, lightly beaten
1 ¼ cup of milk
1/3 cup of olive oil
1/2 a block of Danish feta
Half a cup of Pecorino shavings

Method:
Heat the oil in a frying pan over medium heat. Add the onion and fry until translucent. Then, add the bacon and cook until it’s done. Finally add the spinach and cook until wilted. Remove from the heat.

Preheat the oven and prepare your muffin pan.

In a large bowl, sift in the flour and baking powder. In a smaller bowl, combine the egg, milk and oil. Stir until well combined. Pour the egg mixture into the flour mixture and gently stir until incorporated. Fold in the bacon mixture and the cheese.

Spoon the batter into the muffin holes until they’re three-quarters full. Bake for about 20 minutes or until a fork comes out clean. Serve warm with butter.
