BACON AND SMOKED CHICKEN TORTILLA CUPS

Ingredients:
Cocktail wraps
1x onion, finely chopped
2x cloves of garlic, chopped
Olive oil for cooking
1x pack of West Peak Meats Bacon pieces
1x pack of West Peak Meats Smoked chicken fillets, diced – we used just 1 fillet
Tomato puree 50g
2 Tbsp. brown sugar
Soft goat’s cheese (or cream cheese)
Grated cheddar cheese
Avocado and chives for garnish (or salsa instead)

Fry the onion and bacon pieces until cooked. Add the diced chicken fillet and fry for about 2 minutes. Add the tomato puree and brown sugar, then cook for few more minutes. Set the mixture aside.

Place cocktail tortilla wraps in a prepared muffin pan. Fill each wrap with the bacon, chicken and tomato mixture. To each with 1 tbsp of soft goat’s cheese, followed by the grated cheddar cheese. Bake at 200° for 15 minutes, or until the cheese has melted and is slightly browned. Garnish with chives, avocado and a dash of ground black pepper.
