Ingredients:
1 x packet of Cremini mushrooms, sliced
Olive oil for cooking
2 x cloves of garlic, minced
1 x packet of West Peak Meats back bacon, sliced roughly
750ml béchamel sauce
2 x cups of white cheddar, grated
2 x Tbsps. of chutney
Cajun spice
Salt and pepper
Fresh chives for serving
Method:
Sauté the mushrooms in olive oil and garlic and set aside. Brown the bacon pieces and set those aside as well.
In a large pan, whip up a not-too-thick béchamel sauce and toss in 2 cups of white cheddar cheese. Stir it all together and add the sautéed mushrooms and bacon. Spice things up with the chutney, a dash of Cajun spice, and some salt and pepper for seasoning. Just before serving, garnish with fresh chives.
