ASPARAGUS AND TENDERSTEM BROCCOLI WRAPPED IN BACON

Ingredients:
1 pack of mini asparagus (we used the Woolworths SA brand)
1 pack tenderstem broccoli
1 pack West Peak Meats Streaky bacon
4 Tbsp. Butter
2 cloves of garlic, finely chopped
½ tsp. Dried mixed herbs
½ tsp. powdered ginger
Smokey Kasi sauce (Woolworths SA brand)
Salt and pepper to taste

Method:
Trim the veggies 1cm of the bottom. Rinse, pat dry and arrange in a cast iron pan or on a baking tray.

In a small sauce pan, melt the butter. Add the garlic, dried herbs and powered ginger. Mix well and allow to simmer for 2 minutes.

Pour the butter sauce over asparagus and broccoli. Season with salt and pepper to taste. Take 3 – 4 pieces of asparagus (or 2 stems of broccoli) and wrap them with one slice of streaky bacon. Place the pan on the braai (or cook in the oven/ stovetop). Cook until the bacon is halfway done. Brush the bacon with Smokey Kasi sauce. Turn the asparagus while cooking and baste with more sauce as needed. Be careful not to overcook. Remove from the heat once bacon is fully cooked.
