SAUSAGE BRAAI PLATTER

Ingredients:
[Al meat products – West Peak Meats]
1 pkt Cocktail Cheese grillers
1 pkt Chorizo
1 pkt Hollandse/ Egte Rookwors
1 pkt Bratwurst
1 pkt Supreme Russians
1 pkt Streaky bacon
100ml Barbeque sauce

Method:
Set up a Weber for indirect cooking.

Cut the cocktail cheese grillers into individual mini sausages and wrap with streaky bacon. Secure the bacon with a toothpick.
Place the bacon wrapped cheese grillers over indirect heat and close the lid. Cook for 15min. After 15 min brush the cocktail cheese grillers with bbq sauce.

In the meantime cut tiny criss cross slits in the Bratwurst.

Place all the remaining sausages over indirect heat.Brush the Bratwurst with bbq sauce, making sure it goes into the slits and close the lid. Cook for 15 min.

Remove all the sausages from heat once fully cooked and serve!

Accompaniments:
Whole grain mustard
Honey mustard mayonnaise
Cucumber pickles
Pickled onions

BRATWURST TWISTERS

Ingredients:
1pkt West Peak Meats Bratwurst
Puff Pastry
Basting sauce of choice (Jimmy’s, etc.)

Method:

Cut the Bratwurst in half. Insert a skewer and slice by rilling the bratwurts to crate a spiral. Pull apart on the skewer to create gaps in the spiral.

Twist strips of puff pastry in the gaps.

Braai over indirect heat for 15 min.
Brush with your favourite basing sauce every few minutes untill golden and sticky.

ROOKWORS SOSATIES

Ingredients:
1pkt West Peak Meats Rookwors
1 Red Pepper
1 Yellow Pepper
1 Red Onion
Basting sauce of choice (Jimmy’s, etc.)

Method:

Soak wooden skewers in water for 30min.
Cut rookwors into 2 cm pieces. De seed the peppers and cut into 2 cm squaresTop and tail the red onion and slice in half (Root to tip). Peel the layers and cut into 2cm pieces.

Arange the Rookwors, Onion and peppers on the skewers.

Braai over direct heat until the onion and peppers start to char on the edges.

Move to indirect heat and baste with your favourite basting sauce.
Repeat the basting every few minutes till nice and sticky.
